1 head cauliflower
3 tablespoons oil
2 tablespoons Sambhar powder
1 tablespoon cornstarch
1 tablespoon red chili powder
2 teaspoons turmeric powder
salt to taste

Directions:
Directions:
Preheat oven to 425º.

Separate cauliflower into florets and let them set in hot water for 5 minutes. Drain and cut florets into pieces, if necessary, so they are of uniform size.

In large bowl, mix all ingredients except cauliflower. Add cauliflower; stirring until florets are completely coated with spice mixture.

Grease a cookie sheet with oil; arrange florets in a single layer on cookie sheet. Bake for 20 to 25 minutes.

When done, turn oven to broil and let florets cook about 5 minutes to become crispy. Serve plain or with cooked rice.

This is an Indian-style side dish, or appetizer, which calls specifically for Indian spices. Sambhar powder is available in Indian grocery stores. The quantity of spices can be reduced depending how spicy you like your food.
