9 oz. bittersweet chocolate, chopped
1 c. heavy cream
1 T. dark rum (optional)

Directions:
Directions:
Heat the cream in a small saucepan over medium heat. Bring just to a boil, watching very carefully so that it does not boil over. When the cream is "steaming", add the chocolate bits and reduce the temperature to low. Whisk until smooth. Stir in rum, if desired.

All ganache to cool slightly. Serve over ice cream, when slightly warm.

For Fluffy Frosting: Cool ganache until thick, then whip until light and fluffy.

For Truffles: Cool ganache until thick, then roll into chocolate balls using a small melon baller. To finish truffle, roll chocolate ball in cocoa powder, coconut, chopped nuts, or dip in melted chocolate to coat.
