1 c shortening
2 c sugar
2 eggs beaten
2 tsp lemon extract
3 1/2 c cake flour 1/2 tsp baking powder

Directions:
Directions:
Cream shortening and sugar. Add eggs and flavoring alternately with sifted dry ingredients. Form in long rolls and wrap in waxed paper. Chill several hours or overnight.
Heat oven to 400º. Cut in 1/2 to 1/16 in slices. Place a little apart on ungreased baking sheet. Bake 6 to 8 min, or until lightly browned..

NUT: add 1/2 cup nuts (chopped) to of dough

CINNAMON: add 2 to 3 tsp cinnamon to dough (leave out flavoring

CHERRY: add 1/2 c candied cherries to dough

CHOCOLATE: add 2 squares unsweetened chocolate

My mother gave me this recipe years and years ago. They are good tasting crisp cookies. You could add just about anything to them.
