4 lg. baking potatoes, baked
3 T. vegetable or olive oil
1 T. Parmesan, grated
1/2 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. paprika
1/8 tsp. pepper
8 bacon strips, cooked and crumbled
1 1/2 c. cheddar cheese, shredded
1/2 c. sour cream
4 green onions, sliced

Once potatoes have finished baking, cut in half lengthwise, by holding potato in an oven mitt. Scoop out pulp and save for another use. Place potato skins on a greased baking sheet. Generously brush both the outside and inside of the potato with oil.

In a small bowl, combine Parmesan, salt, garlic powder, paprika and pepper. Sprinkle on the inside and outside of the skins, pressing against the oiled surface to stick.

Bake at 475º for 7 minutes. Turn over and bake until crisp, another 5 - 7 minutes. Remove and sprinkle bacon and cheddar inside the skins. Bake another two minutes until the cheese has melted. Serve immediately with sour cream and green onions.
