1 baked pie crust
3/4 c. sugar
1/3 c. flour
1/4 tsp. salt
2 c. milk
3 egg yolks, beaten
2 T. butter
1 1/4 tsp. vanilla

Directions:
Directions:
In medium saucepan, combine sugar, flour, salt. Add milk gradually, while stirring gently. Cook over medium heat, stirring until bubbly. Keep stirring and cook two more minutes, then remove from heat.

Stir a small quantity of the hot mixture in the bowl with beaten egg yolks. Stir to temper, then add the egg yolks back into the saucepan. Cook two more minutes. Remove from heat and add butter and vanilla. Stir until butter is incorporated, then set aside to cool.

Slice bananas into the baked pie shell. Top with pudding. Seal with plastic wrap and refrigerate until set. Serve with whipped cream dollop.
