1 (1 pound) package bacon, diced
1 (16 ounce) package wide egg noodles
1 (14-16 ounce) can sauerkraut, undrained
pepper to taste

Directions:
Directions:
Preheat oven to 350º.

Cut bacon in small pieces and fry until crisp. Cook noodles as directed on package; drain. In casserole dish, mix cooked bacon with all drippings, noodles and sauerkraut. Stir until well mixed. Season with pepper to taste. Bake for 30 minutes or until hot. Serves 15.

My mother died recently after a long, beautiful life. One of her great joys was the time she spent at the Ramsey Golf Course in Austin, MN where she often took this hotdish and shared with friends at events and outings. I remember her telling me that it was a favorite with her friends. I recently found the recipe among her cookbooks and notes and think she would be pleased that I am sharing it.
