3 cups rice and 3 cups water (cook in rice cooker)
4 cups cooked chicken, diced (I use a Costco broiler chicken)
3 cups sour cream
2 cans black beans, drained and rinsed
12 ounce bag frozen corn
1 cup Monterey jack cheese, shredded
1 cup Colby jack cheese shredded
2 small cans diced green chili
salt and pepper to taste.

Mix all ingredients and spread in 9 x 13 AND 8 x 8 baking dishes. Top with additional grated cheese if desired. Bake for 30 minutes ate 350º until hot and bubbly throughout.
