1 egg, beaten
5 c. peaches, peeled and sliced
2 T. lemon juice
1/2 c. flour
1/2 c. white sugar
1/4 c. brown sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
2 T. butter

Directions:
Directions:
Preheat oven to 450º.

Brush bottom of pie crust with small portion of the beaten egg. Slice peaches into a large bowl and add other ingredients, stirring carefully to mix. Spoon into bottom crust.

To make lattice crust top: Roll out top crust and slice in 1 inch strips. Freeze on parchment lines cookie sheet. Once frozen, weave as lattice across pie top. Brush with egg wash and bake for 10 minutes. Lower the heat to 350º and bake an additional 30 - 35 minutes.
