9 ears of sweet corn, shucked
1 lb. green beans
2 1/2 T. olive oil
2 1/2 T. white wine vinegar
1 lb. cherry tomatoes, halved
2 scallions, chopped

salt and pepper to taste

Directions:
Directions:
Boil corn 4 minutes. Transfer to cookie sheet to cool. In the same pot, boil beans until crisp tender, about three minutes. Rinse under cold water and pat dry. Cut into 1 inch lengths. Slice corn from cob; mix with beans, tomatoes and scallions. Blend together vinegar, oil and seasoning. Toss with vegetables and refrigerate until serving time. Can add pine nuts for crunchy texture.
