1 c. quinoa, rinsed
1 1/2 c. water (2 c. high altitude)
1 c. black beans, rinsed
1 c. red pepper, chopped
1 c. frozen corn, thawed
2 oz. sundried tomatoes, rinsed if in oil

DRESSING:
1/3 c. olive oil
1/3 c. red wine vinegar
1/2 T. parsley, dried, crushed
1/2 T. basil, dried, crushed
1/4 tsp. garlic powder
1/2 tsp. salt
9 grinds fresh black pepper

Directions:
Directions:
To Make Quinoa: Bring water and quinoa to boil, then cover and simmer until the quinoa has popped open. (Check box directions.) Remove from heat and fluff. Put into air tight container and refrigerate. When cool, add remaining salad ingredients, then toss with dressing.

To Make Dressing: Shake all dressing ingredients in a closed container. Pour over the quinoa and vegetable mixture and chill until served.
