1/2 c. mushrooms
1 zucchini
1 yellow squash
1 onion, chopped
1/2 lb. spinach
4 cloves garlic
1 T. olive oil
1/4 c. parsley
1 pkg. non-cook lasagna noodles
2 c. ricotta cheese
2 eggs
3 c. mozzarella, shredded
15 oz. tomato sauce
3 c. vegetable broth
6 oz. tomato paste

Directions:
Directions:
To make sauce: Simmer tomato sauce, vegetable broth and tomato paste.

Saute vegetables, except spinach, in olive oil. In a small bowl, mix 1/2 c. mozzarella, eggs and ricotta. Stir in parsley.

To assemble lasagna: Grease 9 x 13 pan and spread sauce on the bottom. Layer noodles, sautéed vegetables, ricotta, mozzarella, spinach. Repeat layers, ending with sauce. Cover and refrigerate or freeze until ready to bake.

Bake at 350º for 40 - 50 minutes.
