3 eggs
1 cup sugar
2/3 cup pumpkin
1 teaspoon lemon juice
2 teaspoons cinnamon
½ teaspoon salt
1 teaspoon baking powder
¾ cup flour
½ cup chopped walnuts

Filling

1 8-oz. cream cheese
4 tablespoons softened butter
½ teaspoon vanilla
1 cup confectionary sugar
¼ cup chopped walnuts (optional)

Directions:
Directions:
Preheat oven to 3500. Mix together the eggs, sugar, pumpkin and lemon juice. Add the remaining ingredients and mix together thoroughly. Pour into a well-greased and floured jelly roll pan. Bake 13 – 15 minutes. Remove from oven and invert onto a confectionary sugar- covered lint-free tea towel. Let it set for 10 minutes or until cooled. Spread with filling, roll up, and wrap in aluminum foil. Refrigerate or freeze.

Filling

Combine all ingredients, except the walnuts, and beat until smooth. Stir in chopped walnuts.
