2 ½ c flour
3 tbsp. packed light brown sugar
1 tbsp. baking powder
½ tsp. salt
¼ tsp. grated nutmeg
¼ tsp. cinnamon
¼ tsp. ground ginger
½ c unsalted butter, chilled cut into thin slices
1 -15 oz unsweetened pumpkin

Preheat oven to 400. Grease a cookie sheet.
In large bowl mix everything except butter and pumpkin. Cut in butter till it looks like cornmeal. Stir in pumpkin, mix till soft dough forms.

On well floured surface and well floured hands, pat out to ½” thick. Using a well floured knife cut into 2” squares. Put in middle of rack. Bake 15-20 min. (because they are already brown, you might want to break one open to make sure they are done.

Makes 16 to 18
