3/4 c drained & chopped sauerkraut
1 1/2 c buttermilk
2/3 c butter
1 3/4 c packed light brown sugar
2 tsp vanilla extract
2 eggs
2/3 c unsweetened cocoa powder
2 1/4 c flour
1 1/2 tsp baking powder
1 tsp baking soda
1/4 tsp salt

Directions:
Directions:
Sift dry ingredients, set aside. In small bowl combine buttermilk and sauerkraut. In large bowl, cream butter, brown sugar and vanilla until light and fluffy. Add eggs and beat in. Add flour mixture alternately with sauerkraut mix. Beat only until blended. Pour batter into greased and floured 9 x 13 pan. Bake at 350º about 45 minutes. Cool frost with your favorite chocolate frosting.
