12 ounces chocolate chips
1/4 cup water
5 egg yolks, slightly beaten
7 egg whites
pinch of salt

Directions:
Melt chocolate chips and water in a stainless steel bowl in a 300' oven, over simmering water, or in microwave on medium-high. When melted, remove from heat and beat until smooth.

Add the egg yolks and stir until smooth. Cool mixture three minutes.

Whip the egg whites with salt until almost dry. Fold into chocolate mixture.

Pour into a serving bowl or into individual serving glasses. Refrigerate for several hours before serving.

When making the day of, press saran wrap into the top of it after done making it to prevent it from forming a crust. For additional garnish, dust the top with a little coco or instant coffee powder. You can also crush and mix in chocolate chips for texture.
