Richard's Italian Meatloaf Recipe

1 1/2 lbs. ground beef
3/4 c. breadcrumbs (or cracker crumbs)
1 egg
1 t. salt
1/8 t. pepper
1 t. oregano
1 15 oz can Hunt's tomato sauce
1 1/2 to 2 c. Mozzarella cheese

Directions:
Directions:
Mix the first 6 ingredients and then add 5 oz. of the tomato sauce. Meatloaf should be firm and have a nice texture. If it's mushy, add more breadcrumbs.
Place meatloaf mixture on pastry sheet and pat into a 10 x 12 oblong. Sprinkle Mozzarella cheese over the meatloaf; fold the sides over cheese and seal; also seal the ends. Place in baking dish and bake 1 hour at 350º. Drain the grease. Pour the remainder of the tomato sauce over the top and bake 15 minutes more. Serve.
