1 & 1/2 lbs. flounder fillets.(4 large pieces)
1 cup backfin crabmeat
1&1/2 tsp chopped green pepper
1/4 tsp. ea: dry mustard; Worcestershire sauce; salt; Old Bay seasoning
Dash of: pepper and cayenne pepper
4 saltines crushed
1 egg separated
6 Tbsp. mayo
1 Tbsp chopped parsley
1/4 cup butter melted
1/4 tsp. paprika

Rinse and dry the flounder. Set aside. Remove shell from crabmeat and add next 8 ingredients through the crackers in medium bowl. In separate small bowl, Combine egg white and 1 Tbsp. mayo. Add to crab mixture and toss till well blended. Brush fillets on cut side with melted butter. Place flounder in greased shallow baking pan and top each fillet with even amounts of crab mixture. Drizzle remaining butter over top of stuffed fillets. Bake at 400º for 15 minutes. Combine egg yolk and remaining mayo. Spread egg mixture on top of each fillet and sprinkle with paprika. Increase temperature to 450º and bake 6 minutes longer or till golden and bubbly
