Ingredients: 1 & 1/2 lbs. ground lamb or beef 1 medium onion, finely chopped 2 Tbsp. butter salt and pepper to taste 1 tsp. cinnamon 1 (8 oz) can tomato paste 2 cups water 1 large eggplant, unpeeled, chunked and salted 1/2 cup Cheddar or Swiss cheese, grated. Sauce: 4 Tbsp. butter 5 Tbsp. flour 2 cups milk salt and pepper to taste 1 egg beaten 2-4 Tbsp. grated Parmesan cheese

Directions:Brown meat and onion in butter. Add next 4 ingredients and simmer for 15 minutes. Rinse and drain eggplant; simmer in boiling water for 10 minutes. Drain and arrange layers of eggplant in bottom of shallow casserole. Then add a layer of meat and layer of cheese. Repeat layers. Sauce: Melt butter over medium heat in saucepan. Whisk flour in stirring constantly till bubbly. Add milk, salt and pepper. cook stirring constantly until slightly thickened. Remove sauce from heat.; slowly sir in 1/2 cup of sauce into beaten egg. Beat egg mixture into remainder sauce. Pour half of egg sauce over eggplant casserole, and bake at 350ºfor 15 minutes. Cook remaining sauce over medium heat, stirring constantly till very thick Remove casserole from oven, top with remainder of sauce; sprinkle w/Parmesan cheese and return to oven and bake for 45 to 50 minutes or till golden brown. Cut into squares to serve |
