11/3 cups flour, 11/2 tsp cinnamon, 11/2 tsp baking powder, 11/2 tsp baking soda, 1/2 tsp salt, 1 cup sugar, 1 cup cooking oil (I use 1/2 cup cooking oil and 1/2 cup applesauce, 3 eggs, 2 cups grated carrot, 1 cup finely chopped walnuts (I use about 3/4 cups coconut and 1/4 cup walnuts).

Cream Cheese Icing....1 pks (4 ounces) cream cheese, 2 tbsp butter, 3 cups icing sugar.

Preheat oven to 350 degrees. Grease and flour a tube pan. Grate carrot. Sift together the dry ingredients. Combine sugar and oil (applesauce) and beat. Beat eggs in slowly and one at a time. Stir in sifted dry ingredients. Blend in carrots and nuts (coconut) Turn into prepared pan and bake for 1 to 11/4 hours. Remove from pan after cooling for a short time.

Cream Cheese Icing....Cream the creamed cheese and butter until smooth. Gradually blend in the icing sugar. Spread evenly over cake. Sprinkle coconut and finely chopped walnuts over the top if desired.

This is the cake I would make each year for mom's and dad's birthday. We would all get together in the evening on their birthday and reminisce about old stories. At least wice a year we would hear about Greg's encounter with the Easter Bunny and Ed getting lost. It's funny how you never get tired of hearing the same story. I guess it's part of being a family.
