1 1/2 pounds Italian sausage
2 eggs
1 cup minced yellow onions
1 cup minced celery
8 cups dry corn bread
1/2 tsp basil
1/2 tsp thyme
1/2 tsp oregano
1 tsp rosemary, chopped
2 tsp salt
1/2 tsp pepper
1 cup melted butter
3-4 cups chicken/turkey stock

Directions:
Directions:
Saute sausage slowly in a heavy skillet, breaking up with a fork, until lightly browned and thoroughly cooked, about 20 minutes; transfer to a large bowl with a slotted spoon. Drain all but 1/4 cup drippings from skillet; add onions and celery and stir-fry over moderate heat 8-10 minutes until golden. Add to sausage along with remaining ingredients and stir. Mixture will be thick. Pour into well greased casserole pan. Bake uncovered, 1 hour at 325 º until brown on top. Done when fork comes out clean when inserted in middle of pan.
