3-4 lb. chicken
2 lemons cut in half
1 head garlic peeled and smashed
Herbs
Salt
Pepper

I find this is an almost foolproof recipe for roast chicken with a lot of flavor.
Preheat oven to 350

Wash and DRY chicken thoroughly. Place good handful of any herb or combination in cavity followed by garlic and lemons. Close cavity by pulling skin across and using a toothpick to close. Tie legs together. Tuck wings under.
Salt and pepper generously.

Set chicken breast side down in roasting pan and place in top 1/3 of oven for 30 minutes.
Turn chicken breast side up and continue to roast for another 30 minutes.
Turn heat to 400 and cook for 20 minutes. It should be done but take temp to be sure.

Tent and let sit for at least 10 minutes.

Defat drippings and pour over pieces.
