2 teaspoons olive oil, divided
2 packages (11 oz. each) refrigerated French bread dough
1 jar marinated artichoke hearts, drained and patted dry
shredded mozzarella cheese
1 medium red bell pepper
1/2 cup pitted ripe olives
2 garlic cloves, pressed
1/4 teaspoon salt
1/4 teaspoon coarsely ground black pepper
2 oz. grated Parmesan cheese, divided
Chopped fresh basil (optional)

Preheat oven to 400 degrees. Brush a round stone or other pizza pan with 1 teaspoon of the oil. Put bread on a cutting board and cut in half lengthwise. Slice the dough so that you have 32 "half moon" shaped slices. Repeat with the second loaf. Arrange the dough over the stone or pizza pan leaving a 1/2 inch border around the edge and spacing 1/2 inch apart. Brush with remaining oil. Bake 14-16 minutes or until crust is golden brown. Meanwhile, coarsely chop the artichokes, dice the bell pepper, and slice the olives. Combine artichokes, pepper, olives, garlic, shredded mozzarella, salt and pepper and mix well. Remove bread from oven. Sprinkle half of the Parmesan cheese over crust. Top with artichoke mixture. Bake 5-7 minutes or until mozzarella cheese is melted. Remove from oven; sprinkle remaining Parmesan cheese over top and sprinkle with chopped fresh basil, if desired.
