Grandmas Breadballs (meatballs) Recipe

Ingredients: 7 slices stale white bread ½ cup parmesan cheese ½ cup milk 2 eggs 1 lb chopped beef 3 cloves crushed garlic 2 tsp parsley seasoned bread crumbs

Directions: |
Directions:1. Crumble bread into large bowl. Add milk to almost cover, then let sit until bread absorbs the liquid. Add more milk if necessary to make bread soft and mushy. 2. Add beef, garlic, eggs, parmesan and parsley; mix well (use your hands!) 3. Add enough bread crumbs to make the mixture easy to mold. If you make it too dry they will fall apart when cooking. If you accidentally put too much, add more milk.4. Form into balls slightly smaller than golf balls. 5. Fry in vegetable oil until brown on all sides. |

Notes: Growing up we just called these “meatballs”. We never knew any other kind. It wasn’t until I got married that I realized not everyone’s meatballs are half bread. The story I was told, was that during the depression in order to stretch the meat to feed more people you added bread which was much less expensive. When my husband tasted my Mom’s meatballs for the first time he dubbed them “breadballs” and that’s what we’ve called them ever since! (Of course he loved them!) The last time I made these my teenage son Nicholas ate twelve of them as a snack! They're THAT GOOD !!
