1 – 15oz. can corn (rinsed and drained)
1 – 15oz. can black beans (rinsed and drained)
1 – 15oz. can hominy (rinsed and drained)
1 red pepper, diced
2 jalapenos (removed seeds for mild, add seeds for hot)
½ large red onion, diced
½ C cilantro
2 limes zest and juiced
¼ C extra virgin olive oil
1 tsp. salt

Directions:

Mix together. Refrigerate for about an hour. Serve with (lime) tortilla chips or on top of favorite recipe.
