2 1/2 c. sifted cake flour
2 1/4 tsp. baking powder
1/4 tsp. salt
1 c. sugar
1/2 c. shortening
2 eggs
3/4 c. milk
1 tsp. vanilla
Snow frosting

Directions:
Sift flour once. Measure. Add baking powder and salt and sift again. Cream shortening, gradually add sugar and beat till light and fluffy then add eggs one at a time, beating well after each addition until smooth. Add flour alternately with milk beatine after each addition till smooth. Add vanilla. To a well-greased lamb cake mold add batter to face, making sure ears are well filled. Fill remainder of mold. Put on back half of mold and wire mold together. Place face down on a baking sheet. Bake at 450 degrees for 15 minutes; reduce heat to 350 and cook 35 minutes more. Remove back of mold carefully and let cool about 5 minutes. Remove cake from mold completely then and stand lamb on cooling rack. Cool completely.
Snow Frosting: Combine 3/4 c. sugar, dash of salt, 3 Tbsp. water and 1 tsp. light corn syrup in top of double boiler Beat with a rotary egg beater about 1 minute until thoroughly mixed. Cook over rapidly boiling water beating constantly about 4 minutes until frosting will stand up in peaks. Add 1/2 tsp. vanilla and beat until thick enough to spread.
Cover cooled lamb cake with snow frosting and sprinkle with coconut.

This was one of Grandma Butler's signature items and Uncle Randy's favorite for his birthday. Even as a teenager, Randy wanted a lamb cake for his birthday.
