5 qt. pot
6 leg quarters,
water,
1 T. salt,

qt. bowl,
2 c. flour,
1 c. milk,
1 tsp. salt,
1 egg,

1 T. cooking oil.

1 c. cold water w/
3 T. corn starch.

Directions:
Directions:
In pot add: Leg quarters + water up to 3/4 pot full + salt. Cook on med. for 30 - 45 min. until done.

While chicken is cooking,
To bowl, add: flour + milk + salt + egg. Start folding in slowly with large spoon, then start beating faster with spoon. Beat until when spoon is tilted, batter falls very slowly off spoon. If it is to thick, add 1 T. water, and keep beating until it is the right consistency.

When chicken is done, take out of pan and set aside in the microwave or with a cover on it so doesn't dry out.

Keep fire under the chicken broth and add:
1 T. cooking oil
Turn heat up to high, and bring broth to a full boil. While that is heating, stir the batter really well to see if it is still the right consistency. With the broth still boiling, take a T. spoon of batter and put down into broth and let the batter fall off the spoon by itself. Each time, let dumpling form before adding next spoon full. Continue this until you have utilized all the batter.

Use a large ladle and check the dumplings to see that they are forming okay. Once formed good, turn heat down to medium. (Make sure that all corn starch that was stirred into cup of cold water is melted into a white liquid, restir.) add: cold water w/ corn starch into pot of dumplings with ladle and stir very slowly until it thickens. If you want thicker gravy, repeat the cold water w/corn starch. Enjoy!!
