2 smoked wild rice sausage or bratwurst, thinly sliced
1 yellow onion, diced
1 medium carrot, diced
1 rib celery, diced
3 garlic cloves, minced
1 1/2 teaspoons kosher salt
1 cup cooked wild rice
1/2 cup heavy cream
1/2 cup frozen peas
1 (10 3/4 ounce) can condensed cream of mushroom soup
1/2 cup grated Parmesan cheese

Directions:

Preheat oven to 375º. Spray casserole dish with nonstick cooking spray.

In medium skillet, cook sausage over medium-high heat until fat has rendered out. Add onion, carrot, celery and garlic; saute on medium heat until golden and translucent. Add kosher salt.

Transfer mixture to prepared casserole dish. Add remaining ingredients, except Parmesan cheese; mix well. Sprinkle Parmesan over top of casserole.

Bake for 20 minutes or until cheese is golden brown.
