2 c chopped carrots
2 c chopped celery w/ leaves included
1 med chopped onion
2 tbs olive oil
1 rotisserie chicken removed from bone and skin, chopped
2 tsp salt
2 tsp pepper
1 quart chicken broth
2 peeled and chopped potatoes
1 small bag of frozen peas
1 tbsp poultry seasoning
1 bay leaf
1/2 c chopped fresh parsley

Herb Dumplings:
2 c biscuit mix
2/3 c fresh herb (parsley, oregano or thyme)
1 c milk
4 tbsp melted butter

Directions:
Directions:
Saute onions, celery and carrot in olive oil. Add remaining ingredients, except parsley. Bring to boil and cook until potatoes are tender. While this is cooking, mix up ingredients as noted for dumplings. Mix only until moistened. Drop by tbsp on top of simmering soup. Cover tightly and simmer for 15 min or longer, if necessary.
