1 cup butter, softened
1cup sugar
1 egg
1 cup mashed sweet potato
1 teaspoon vanilla
2 cups flour all purpose
1 Teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 Teaspoon salt
1/2 teaspoon ground allspice
1 cup chopped pecans
1 cup raisins

Directions:
Directions:
Cream butter and sugar in large bowl till light and fluffy.
Beat in egg, sweet potato and vanilla.
Combine the flour,baking powder, cinnamon, baking soda, salt and all spice.
Gradually add to creamed mixture and mix well
Fold in pecans and raisins.

Drop by Tablespoonfuls 1 in apart onto ungreased baking sheet. Bake at 350 degress 10-12 mins or until edges begin to brown.
Cool 1 min on sheet before moving to wire racks.
Store in airtight container.
These freeze very well

Sometimes I use pumpkin and walnuts instead of sweet potatoes and pecans.
