Coffee Cake:
½ c. (1 stick) unsalted butter, room temperature
1 c. sugar
2 large eggs
1 tsp. vanilla
1 T. grated orange zest
2 c. unbleached all purpose flour
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
1 c. sour cream
2½ c. whole fresh cranberries

Streusel Topping:
1 c. light brown sugar (packed)
½ c. unbleached all purpose flour
2. tsp. ground cinnamon
¾ c. walnuts (optional)
8 T. (1 stick) butter, cold
1/2 c. walnuts, coarsely chopped

Directions:
1. Preheat oven 350º. Butter and lightly flour a 13" x 9" baking pan.
2. Using electric mixer, cream butter and sugar together until fluffy. Beat in eggs one at a time, then vanilla and orange zest.
3. Mix flour, baking powder, soda, and salt together. Add flour mixture to creamed mixture alternating with sour cream to make smooth, thick batter. Spread batter evenly in pan. Sprinkle cranberries over top.
4. Prepare topping. Toss sugar, flou,r and cinnamon together in small bowl. Cut in butter with two knives or pastry blender until mixture is crumbly. Stir in walnuts if using. Sprinkle streusel over cranberries.
5. Bake until cake tester inserted in center comes out clean, about 45 minutes.

Needless to say, I make a lot of these coffee cakes during cranberry harvest. And I make sure there are frozen cranberries in the freezer for the rest of the year as this coffee cake is traditional for our holiday get togethers. P.S. Don't cheat on the unbleached flour - bleached all purpose just doesn't work as well - use King Arthur's "unbleached all purpose" flour for best results.
