4 c. squash (peeled, seeded and cut into 1/2 in. cubes)
1 T. olive oil
salt and pepper to taste
1 handful gorgonzola (crumbled)
maple syrup

Directions:
Directions:
Toss the squash in the olive oil with the salt and pepper. Roast in a preheated 400º oven until tender, about 30-40 minutes, turning over about half way through. Mix the roasted butternut squash and gorgonzola cheese. Drizzle maple syrup over the top and serve.
