1 cup brown sugar
1 cup butter, softened
1 tsp vanilla
1 large egg
3 cups flour
1 1/2 tsp cinnamon
1/2 tsp soda
1/2 tsp salt
1/3 cups chopped nuts (optional)

Directions:
Directions:
Beat first 4 ingredients on medium speed. Stir in remaining ingredients, but save nuts for last.
Shape dough into 10x13" rectangle on plastic wrap. Wrap and refrigerate* about 2 hours or til firm, but no longer than 24 hours.
To Bake: Heat oven to 375º.
Cut rectangle into 1/8" slices. Place 2 inches apart on ungreased pan.
Bake 6 to 8 minutes or til light brown. Cool 1 or 2 minutes then remove from pan.
*Or you can freeze tightly wrapped dough for up to 2 months. To use: Slice and bake at 375º, but add 1 or 2 minutes when dough comes straight from the freezer.
