1 lb. hamburger
1/2 onion, chopped
1 c. corn kernels
2 cloves of garlic, chopped
2 tbs. chili powder
2 tbs. paprika
1 tbs. oregano
1 tbs. cilantro
1 tsp. salt
1/2 tsp. pepper
1 c. self-rising cornmeal
1 tsp. sugar
3/4 c. milk
1 egg
2 c. shredded cheddar cheese
1 large tomato, diced
Cooking spray

Directions:
Directions:
Preheat oven to 425. Brown hamburger and onions together. Add corn through pepper. Remove from heat. Mix cornmeal through egg in a large mixing bowl. Coat an 8x8 baking dish with cooking spray. Mix hamburger mixture into cornmeal mixture. Spread into baking dish. Top with cheese and diced tomatoes. Bake 25-30 minutes or until bubbly.
