3 8 oz. packages of cream cheese
1 c. sugar
3 eggs
1½ t. vanilla
¼ c. real lemon juice

Optional: graham cracker crust for 9 inch pie pan

Topping:
½ c. sour cream
1 T. sugar
¼ tsp. vanilla

Directions:
Directions:
1. Mix eggs, cream cheese, sugar, lemon, and vanilla in standing mixer at low speed. Mix for 15 minutes. Set a timer and do not whip. Scrape bowl occaisionally.
4. Pour into 8" springform pan if not using crust. Otherwise, pour over graham cracker crust and bake at 275º for about 1 hour. Let set for 20 minutes in oven .
5. In the meantime, blend together sour cream, sugar, and vanilla for topping. Spread on cake after cake has been out of the oven for 20 minutes.
6. Bake for 10 minutes more at 300 degrees.

This recipe comes from The Tavern in State College, PA. The Tavern is THE retaurant after Nittany Lion football games and this is THE most wonderful plain cheesecake we know. I make mine with a graham cracker crust and skip the topping, substituting fruit instead.
