3 bags (10 oz. each) of spinach
2 T. salt
1/3 c. heavy cream
salt and pepper

Clean spinach and cut off and discard stems.

Bring 4 quarts water to boil with the salt. Add spinach, pushing it down into the water with a long handled wooden spoon. Boil until the spinach "melts" about 30 seconds. Drain immediately in a colander and rinse under cold running water until the spinach no longer feels warm to the touch. Squeeze the water out of the spinach. Cut coarsely. Refrigerate until ready to use.

Season the cream generously with salt and pepper and boil in a medium pot or saute pan over high heat for 3-4 minutes, until it gets very thick. Add the spinach and turn heat down to medium. Stir for a minute or two until spinach is warm and has absorbed all the cream.
