"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
3 pkgs. whole cranberries
2 large navel oranges
2 1/2 c. sugar

Directions:
Directions:
Wash cranberries and oranges. Pick out any stems and berries that are not good. Put 1 pkg. of berries in food processor. Cut orange in half. Cut half in 1/4" slices, then cut the opposite way to get chunks. Add the orange to the cranberries and pulse a little at a time until it is combined and has visible pieces (not fine.) Put in a bowl and continue the same way until all the cranberries and oranges are combined. Mix together and add 2 cups of sugar, mixing to combine. Allow mixture to sit in the bowl for at least 1 hour at room temperature for the mix to ferment. Taste and add the balance of the sugar a little at a time to reach the desired sweetness. I prefer it to be tart, so I don't add much sugar after the 2 cups. Once it is set at desired sweetness refrigerate until serving.

Mix every so often while refrigerated so the sugar doesn't all fall to the bottom of the bowl.
