2 C diced raw green apples (granny smith or another tart variety)
1 C sugar
1 C flour
1 tsp soda
1 tsp cinnamon
1 tsp vanilla
1 egg beaten
1/4 C oil
1/2 C chopped nuts (I like walnuts)
1/2 tsp salt

Directions:
Directions:
Sprinkle sugar over diced apples. Sift dry ingredients and mix well with apples. Stir in oil, egg and vanilla. Add nuts. Bake in 8 x 8 square greased pan. Bake in 375º oven for 40 minutes or until done. This is good served warm with vanilla ice cream. This can be doubled nicely and in which case, bake in greased 9 x 13 inch pan for the same period of baking time
