1 c buttermilk
1/2 c butter
1 tbsp light corn syrup
1 tsp baking soda
1 tsp vanilla extract
1/2 c chopped walnuts

Directions:
Butter sides of a heavy large saucepan or Dutch oven. Combine sugar, buttermilk, butter, corn syrup, and baking soda in pan. Stirring constantly, cook over medium low heat until butter melts and sugar dissolves. Using a pastry brush dipped in hot water, wash down any sugar crystals on sides of pan. Attach a candy thermometer to pan making sure thermometer does not touch bottom of pan. Increase heat to medium and bring to a boil. Cook, without stirring, until mixture reaches soft ball stage (approx 234 to 240 degrees). Test about 1/2 tsp mixture in ice water. Mixture should easily form a ball in ice water but flatten when held in your hand. Remove from heat. Add vanilla, do not stir. Cool to approx 200 º Using medium speed of an electric mixer, beat until fudge thickens and begins to lose its gloss. Stir in walnuts. Pour into a buttered 8 inch square baking pan. Cool completely. Cut into 1 inch squares. Store in an airtight container in refrigerator.
