6 potatoes, about 2 lb
1/3 cup finely choped onions

Sauce:
3 tbsp butter
3 tbsp all-purpose flour
1 1/2 tsp salt
1/2 tsp pepper
2 1/2 cups milk

Directions:
Directions:
In saucepan, melt butter over medium heat. Add flour, salt and pepper; cook, stirring, for 1 minute. Gradually stir in milk; cook, stirring constantly, for about 5 minutes or until boiling and thickened. Set aside.

Peel and thinly slice potatoes; arrange one-third in greased 8-inch square baking dish or 8-cup casserole. Pour one-third of the sauce over potatoes; sprinkle with one-third of the onion. Repeat layering twice. Cover and bake in 350º F oven for 45 minutes. Uncover and bake for 30 minutes longer or until potatoes are tender and top in lightly browned. Let stand for 5 minutes before serving.
