2 red or green peppers, seeded
1 1/2 cups cider vinegar
6 1/2 cups of white sugar
1 tsp. hot pepper sauce
6 oz. liquid pectin (Certo)
3-4 drops red or green colouring

Directions:
Directions:
Chop peppers & put in blender with vinegar. Process until smooth. Pour into a large pan. Add sugar and hot pepper sauce. Heat until sugar dissolves and mixture starts to boil. Boil for 3 minutes, stir in pectin and return to full boil and boil for 1 minute. Remover from heat, skim off foam, add food colouring and more hot pepper sauce if desired. Pour into sterilized jars 1/4" from top and seal. Process in boiling water bath for 5 minutes
