3 lbs. beef chuck roast
1 large onion - cut into quarters
8 whole cloves
1 sm. green pepper, quartered
2 large carrots - cut into 1/3s
3 stalks of celery, cut into 1/3s
2 bay leaves
1/4 C. beef bouillon granules (optional)
1/2 tsp. black pepper
3 qts. hot water
1 C. fresh parsley, chopped
1 lb. medium noodles - good quality, uncooked

Preheat oven 325º
Put everything - EXCEPT noodles and parsley - into Dutch oven. Cover and bake 3 hours. Remove all vegetables from broth and discard. (Reserve 2 pieces of carrots and chop into very fine pieces. Add to broth.) Shred beef into bite sizes and return to broth. Stir in noodles, cover and bake 1 hour, 15 minutes - until noodles are tender. Stir once during this time - carefully watch to see if broth is absorbed. If needed, add more broth. Sprinkle with chopped parsley garnish before serving.
