1 pound ground beef or turkey
1 package taco seasoning
1 (16 ounce) can pinto beans, drained and rinsed
1 (15 ounce) can tomato sauce
1 (11 ounce) can Mexican-style or whole kernel corn
1 cup shredded cheese
1 cup coarsely crushed tortilla chips

Directions:

Preheat oven to 400º.

In large skillet, brown meat over medium-high heat; drain. Stir in taco seasoning, beans, tomato sauce and corn. Bring to a boil. Reduce heat to low, simmer 5 minutes.

Spoon into a 2-quart casserole, sprinkle with cheese and tortillas and bake 5 to 10 minutes until cheese is melted. Serve with toppings such as shredded lettuce, chopped avocado and sour cream, if desired. Serves 6.
