1 tbsp. Cake Sice
1 tsp. Salt
3 tbsp. Baking Powder
1 lb Sugar (2 cups)
12 Eggs
3/4 lb. Creamery Butter (margarine)
1 1/4 lb. Plain Flour
2 lbs. Raisins
2 lbs. Red Cherries
2 lbs. Green Cherries
1 1/2 lbs each; Red, Green, White Pineapple
2 lbs. mixed Fruit
1 lb. Dates
1 qt. Nuts

Directions:
1. Prepare fruit; cut cherries in half or quarter, cut pineapple into small chunks, remove stems from raisins and cut in half, cut dates in small pieces
2. Mix together 6 cups of flour with the baking powder
3. Roll fruit in the flour/baking powder mixture in a cheese cloth or other netted material and set aside
4. Mix together the eggs, sugar, cake spice, salt, and butter and 3 cups of flour.
5. Fold the fruit into the batter mixture.
6. Pour into greased and floured pans.
7. Bake in a 250º preheated oven for 4 to 6 hours

Makes 2 tube cakes plus 1 small loaf pan.
