2 potatoes, diced
salt
pepper
4 T butter
Green peppers
3 1/2 cups of leftover turkey
Stuffing
1 T oil
Can add peas if desired
Small carton of Half & Half

Directions:
Directions:
Cook potatoes 4 to 5 min in boiling water. Drain and rinse with cold water. Melt 2 T butter over medium high heat and saute green peppers and onions (if using) for 5 minutes. Remove with slotted spoon. Add another T of butter. Add turkey, dressing and cook for 2 minutes. Remove to bowl w/peppers. Add 1 T butter and 1 T oil. Add potatoes. Cook 6- 8 minutes. Add turkey and green peppers to skillet. Pour Half & Half over and cook for 5 minutes. Serve over toast or bread.
