2 lb fresh sweet Italian sausage (bulk kind)
1 lb tortellini's
2 C water
1 pkg frozen spinach, thawed, rinsed and squeezed dry
1 can corn, drained
1/2 C onion, finely chopped
1 1/2 tsp salt
1 can (14.5 oz) diced tomatoes (garlic and herb)
2 ea 32 oz of chicken broth ( can use an extra box or add some water if needed )
1 can of original Ro Tel tomatoes (or, if you prefer less spicy, a small can tomato sauce for color)
2 T Italian seasoning
1 can sliced carrots, drained
1 T garlic, minced fine
1 tsp pepper

Directions:

Brown the sausage in a skillet over medium heat.
Drain.
In a large pot combine browned sausage, diced tomatoes, corn, chicken broth, water, seasoning, spinach, carrots, garlic, onions, salt and pepper.
Over medium-high heat, bring to a boil then decrease to low and let simmer for 30".

In a separate pot, boil tortellini for 3 minutes, then decrpease heat to low and simmer per package directions.
When the tortellini comes to the top, they are done. DO NOT OVERCOOK.
Remove when done.

Add the tortellini to the soup before serving, allowing enough time to warm. That will prevent them from getting mushy.

Serve with crusty garlic bread or cornbread and a salad.

Add chicken broth as needed.
