2 lb skirt, flank or sirloin tip steak, cut into thin, wide strips against the grain

Marinade:
1 C teriyaki sauce
1 T minced ginger
1 T minced garlic
1 tsp salt

Peanut Dipping Sauce:
1 tsp minced ginger
1 tsp minced garlic
1/4 C smooth peanut butter + 1 T
1/2 C unsweetened coconut milk
1 1/2 tsp sesame oil
2 tsp soy sauce
1 tsp brown sugar, packed
1 T lime juice
1/2 tsp Thai fish sauce
1/4 tsp cayenne pepper
1 T cilantro, chopped
1 T chopped peanuts

bamboo skewers, soaked overnight in water.

Directions:
Directions:
Place the beef strips in a medium-sized bowl and pour the teriyaki sauce over them.
Add 1 T ginger, 1 T garlic and the salt to the bowl and stir .
Marinate in refrigerator.

In a small bowl, combine the remaining ginger, peanut butter and coconut milk and whisk together.
Add the sesame oil, soy sauce, brown sugar, lime juice, fish sauce, cayenne pepper and 1 tsp garlic to the bowl.
Whisk to combine ingredients.
Place the sauce in a serving bowl and garnish with the cilantro and chopped peanuts.

Thread the meat onto the skewers in a ribbon-like fashion.
Grill or broil about 30 sec to 1 minute on each side for medium-rare.

Serve on a bed of shiso greens with the dip.
