50 lb ground meat (40/60 ratio of pork and deer)
5 Tbs black pepper
2 cups brown sugar
2 Tbs dry mustard
1 cup pickling salt
2 tsp paprika
2 tsp allspice
*1 clove garlic in 2 cups hot water
Directions:
Directions:
Combine dry ingredients. Mix thoroughly into the meat, along with garlic water, and enough additional water to get to the right consistency to stuff into the casings.
*discard garlic clove
