1 lb fresh or frozen fish fillets
1 egg
2/3 cup fine dry bread crumbs (or cornmeal)
Vegetable oil for frying

Directions:
Directions:
In a shallow dish beat the egg, stir in 2 Tbsp water. In another dish combine bread crumbs, ½ tsp salt and dash pepper. Dip fish into the egg mixture, coat both sizes. Then roll fish in crumb mixture, coat evenly. Place fillets in refrigerator – this will help breadcrumbs adhere to the fish. In a large skillet, heat ¼-inch deep oil. Add the fish in a single layer. Fry fish on one side till brown. Then turn and fry on the other side.
