1/4 c butter
3 whole, boneless, skinless chicken breasts, halved
3 med zucchini, cut into 1/8 inch slices, (3 c.)
2 green onions, cut into 1/4 inch slices, (1/3 c)
3 c cooked rice

Sauce:
1 garlic clove, minced
3 T flour
3 oz cream cheese, softened
10 3/4 oz chicken broth
1/2 tsp pepper
Directions:
Directions:
In skillet, melt 1/4 c butter until sizzling. Add chicken and cook over medium heat, turning once, until brown and tender, about 12 - 15 minutes. Add the sliced zucchini and onion. Continue cooking and stir occasionally, until tender, about 5 - 7 minutes.
In saucepan, melt 2 T butter until sizzling. Add garlic and cook over medium heat for 1minute, stirring occasionally. Stir in the flour and continue cooking until smooth and bubbly, about 1 minute. Add softened cream cheese, broth and pepper. Cook until sauce is smooth and thickened. Stir occasionally, about 5 - 7 minutes. To serve, spoon cooked rice onto large warmed platter or serving dish. Arrange chicken and zucchini on top. Spoon sauce over chicken.
