2-3 chicken breasts, cut into pieces
1 c. chicken broth
1 (32 oz. Bag) frozen broccoli
1 can cream of chicken soup
1/3 cup mayonnaise
2 T. lemon juice
1 c. rice (precooked or instant)
Approx 1 lb. Cheddar cheese (grated)
About 8 slices of buttered bread (broken into pieces)

Cook and season chicken in a large/tall frying pan or pot. I then add about 2-3cups of water and continue to cook for a few minutes (use as my chicken broth and helps make chicken more tender). Add frozen broccoli, season with salt. If you don't have precooked rice you may use instant and add at this point along with additional water. Cover and turn to medium heat. Cook until broccoli is tender, stirring occasionally. Combine cream of chicken soup, mayonnaise and lemon juice and add to broccoli/chicken. Stir together well and place in 9” x 13” pan. Cover with broken bread. Bake on 350 for about 5, then sprinkle cheese on top and bake about 20 minutes longer.
